Favorite Things Friday
Full disclosure I REALLY REALLY REALLY want to have a little baby girl. When pregnant with the boys I wanted boys but now I'm declaring my desire for a little girl... and NO I'm not preggers I'm just putting it out there into the universe. I also am putting it out there that I want this room for my baby girl... Rachel Elizabeth you are welcome to come to my home and design my room if/when we have a girl.
After seeing this easy DIY Ice Cream Bar I'm wishing that I had added this to my (I mean OUR) Summer Bucket List! maybe we will need to incorporate this into Hunter's Third Birthday Party! Love that they used muffin pans for the toppings and I like the easy Waffle Bowls!
I love this Mason Jar Pineapple gift. Emma will have a ton of teachers this year and this is a perfect inexpensive treat for her to make and take in. Also side note... I had never heard of Plutonium Spray Paint until reading this post but now I have bought some and cannot wait to try it out! You know I love some spray paint!
Yes please! Get me one of everything in this bathroom! Just looking at this makes me feel more at peace!
I'm about 100% over my fireplace... maybe this will be something that I tackle the next time that Matt goes out of town.
Loving this office and I'm thinking about doing something similar in my space. I've been trying to find inspiration and it has been lacking! I'm going to do a white file cabinet with gold hardware though.

Throwback Thursday... August Edition
Fully aware that it is no longer August but I wanted to still do an August Throwback... so here you go!
August 2009...
Looking back at all of the cooking that I was doing in my first year blogging makes me hungry and it is a great reminder of some of the yummy recipes that I made from Fast, Easy, Fresh. I did start this as a cooking blog after all! By August of 2009 I had already cooked 200 recipes... and that was only in TWO months! Crazy town!
August 2010...
We had found the home that we wanted to buy and completed our disastrous home inspection! Nothing like having a tree fall and total two vehicles during an inspection! Luckily we didn't take it as a bad sign and we purchased our home!
We took a trip to Savannah to meet William Fleming... He isn't so little any more!
This is also the month that Emma came to us with the desire for a loft bed in the new house... Spoiler alert... this is still in pieces in our garage.
August 2011...
Didn't blog too much this month but I did get around to sharing a few photos of Matt getting ready for our wedding... What a cutie!
August 2012...
Sophie, our dog, had joined our family in the last trimester of my pregnancy with Hunter and we were in full baby planning mode but also loving our puppy! Here matt is practicing the moby wrap on Sophie.
I was ready to POP! this was a photo from mid-August.
August 2013...
Hunter was 11 months old
Emma completed her third year at Camp Winshape
and we didn't know it yet but this is really a photo of all three kiddos... Gibson was already in my belly!
August 2014...
Fast forward another year and Gibson was already 5 months old!
and Hunter was adapting well to being a big brother! Hunter is 23 months in this photo...
In an effort to streamline our lives we tried out Amazon Pantry for the first time and LOVED IT! Game changer
I gave my nephew, William, an updated room... and almost had a heart attack after spilling a gallon of blue pain on the carpet!
Crazy town! Love looking back at the last few years that I had this blog. Time has just flown by and changes sooo much each and every year! We are truly so blessed!

Gibson at 17 Months
Last week Gibson turned 17 months and well I figure it is time for an update.
Gibson LOVES bath time and does not seem to mind when Hunter dumps water all over his head.
His eyes just steal my heart every time I look at them! In the past month he isn't eating as much and we feel like he has been loosing some much needed weight. I would say that he probably eats what an "average" child his age does but he needs many more calories... thank goodness for pediasure. He drinks 3-4 of those a day and that really helps him get extra calories!
Gibson is a really good friend... he is super outgoing and doesn't show any fear of strangers. He will run up and give kisses and hugs to anyone.

Gibson just started to follow one step commands... for example he will follow the direction to throw something away or pick ______ up. This was a HUGE accomplishment and we were so excited when he started doing it.
He will also now say a few words on his own without mimicking. YAYA!
In medical news Gibson completed his final evaluation and was accepted into the Early Intervention program in Alexandria. In true Gibson style he made it through the 3 hour evaluation with a constant smile on his face... the speech and occupational therapists even commented on his sunny disposition. Home boy is just always happy!
This month Gibson also received his Sure Step Orthotics! It is sooo amazing what these little things can do! He walks so much straighter and more confident when he has them on.
We are still in a holding pattern with Gibson's genetic testing. We received a third letter, just last night, letting us know that the insurance would not pay for the test that Children's Hospital is recommending. It is an extremely expensive test which would map all of his chromosomes to show if there is a deletion of genes on any of the chromosomes. Children's has now gone back three times with insurance to provide additional justification and to push them to pay for the test. In yesterday's letter it says that this was the final review for this calendar year that they would do on the test and that it was denied and not viewed as being essential... now I will need to get back on the phone with Children's to determine what our next steps will be. There are a few specific syndromes that they can test for individually and we might just need to do that for now.
So that is a full and long overdue Gibson update!

Morning Chicken and Brussel Sprouts
This recipe seriously could not be easier!
Ingredients:
In a gallon-size, resealable, plastic bag add the mustard, paprika, garlic, thyme, lemon zest, lemon juice, and oil. Mix together and add chicken. seal the bag, pressing out any excess air, and turn it over a few times to coat all the pieces.
Marinate in the fridge for 8/12 hours (or room temp for 1 hour... this is what I did), turning the bag over once or twice, if possible.
Preheat oven to 450
Remove chicken from bag and place on sheet pan. Season with salt and pepper.
Roast until golden brown, about 20 minutes. Flip pieces over and roast until cooked through, about 10 more minutes.
SOOO yummy!
Add broth and bring to a broil. Reduce heat and simmer, covered, for 8 minutes. Add vinegar and simmer, uncovered, until liquid is evaporated (about 2 minutes)
Remove thyme sprigs, stir in butter, season with salt and pepper.
YUMMY

- 1 heaping T Dijon or whole-grain Mustard
- 1T smoked paprika
- 1 garlic cloves, smashed
- leaves from 4 thyme sprigs

Now for the yummy Brussels Sprouts with bacon (two of my favorite things!)

- 2 shallots, minced
- 1 lb Brussels sprouts, halved
- 2 garlic cloves, smashed
- 2 springs thyme
- 1.5 C chicken broth
- 2 T apple cider vinegar... I didn't have so I used red-wine vinegar
- 1 T butter
- salt and pepper
Directions:
In large skillet with a lid, head olive oil over medium heat. Add bacon and shallots and cook until bacon is cooked through. Raise heat to high and add Brussels sprouts, garlic and thyme. cook, stirring occasionally, until Brussels are light brown (about 3-4 minutes)
