INGREDIENTS:
- 4 Large Bananas
- 2 Tablespoons + 1/2 Cup (1 Stick) unsalted Butter, Melted & Cooled
- 2 Cups all-purpose Flour
- 1 teaspoon baking soda
- 1/2 teaspoon fine sea salt
- 1/2 Cup Granulated Sugar
- 1/2 Cup Light Brown Sugar
- 1 Tablespoon Vanilla Extract
- 1 Large Eggs, Beaten
Preheat oven to 400 and place UNPEELED Bananas on a baking sheet.
Roast for 15 minutes, remove, and let cool. Adjust your oven temperature to 350.
While my bananas are roasting I organize all of my other ingredients
Once Bananas are cooled peel and place roasted bananas in a large mixing bowl and mash
To the bananas, add the sugar, brown sugar, vanilla extract, 1/2 Cup of melted butter, and the eggs
In a small bowl, sift together the flour, baking soda, and salt
Add the dry ingredients to the wet mixture, and stir until just combined.
Now I decided to make muffins but you can also make bread. If making bread use a pastry brush and your remaining butter to butter your loaf pan so that the bread will not stick!
For bread- Bake for 45-55 minutes at 350
For Muffins - Bake for 30 minutes at 350
